Hello Friends! Let’s make Easy Chicken Salad With Grapes and Almonds together. I’ve always loved a good chicken salad. It is so creamy, delicious, and versatile. I was born and raised in the Czech Republic and there are a lot of deli or cafe style places, which sell yummy salads, open face sandwiches/toasts or baguettes. The selection of “prepped” salads is large, and everyone can find whatever they like. My favorite salads have always been chicken salad, egg salad, and Camembert salad. These are usually served with a fresh baked baguette which is just so delicious. Since we are not able to travel to see my family in the Czech Republic this year, I have been making lots of “prepped” salads since oh well, they are delicious, and I am also homesick.
Favorite ways to eat Easy Chicken Salad With Grapes and almonds
- If you are trying to eat low-carb, I recommend serving this salad over a bed of mixed greens. You can sprinkle additional almonds for some additional crunch
- Classic sandwich style – while or whole grain bread to your liking
- In a wrap or pita bread pocket
- With crackers and mixed greens or a side of fruit and raw veggie sticks, such as carrots, bell peppers, or English cucumbers

The Best Chicken Salad
This is the best chicken salad ever. It is so creamy, delicious and versatile. Best eaten over a bed of mixed greens and crackers
Ingredients
- 1 rotisserie chicken, shredded (I used unseasoned chicken from Sprouts, it’s only $6.99 for farm fresh for chicken, total bargain)
- ½ cup seedless red grapes
- ½ cup chopped celery
- 2 chopped green onion
- ¼ cup sliced almonds
- 3 heaping tablespoons mayo (I used Sir Kensington Organic Mayo) – You don’t have to use this mayo but I highly recommend it. It has a very specific taste which makes this salad super delicious.
- 1 tablespoon Dijon mustard (I used Maille Dijon mustard) – In my opinion, it’s the best Dijon mustard there is. I have been buying this mustard for over a decade now.
- Lemon Juice from 1/3 of a lemon
- Sea salt and black pepper to taste
- 1 tsp chopped fresh dill
Instructions
- Remove bones and skin from the chicken and cut the chicken into cubes
- Add the rest of the ingredients and mix well. You can refrigerate for 15-30 minutes before serving or overnight

I enjoy eating this salad over the mixed greens and low-carb crackers
