Hello Friends! If you are looking for delicious and easy toast idea, look no more. Its no secret that I love a good avocado toast but let me tell you, the combination of fresh juicy figs and salty aged Gorgonzola is simply to die for.
Every year, I can’t wait for September. Usually after the end of August, figs are available in stores here in North Texas. My favorite are black figs, super sweet and juicy. My favorite way to enjoy them is in a combination with strong bold flavors such as Gorgonzola and balsamic vinegar.
INGREDIENTS:
2 Whole wheat toasts, toasted
2 Eggs
1/2 Avocado
2 tbs Ricotta
2 tbs Gorgonzola
2 Figs
1 tsp Balsamic glaze
Fresh thyme and red pepper flakes for garnish
DIRECTIONS:
Avocado & Egg toast – Toast the bread and heat up medium size skillet, scramble 2 eggs with 1 tbs butter. Make an avocado rose and garnish with red chili flakes and black pepper
Fig & Gorgonzola toast – toast the bread. mix ricotta and Gorgonzola together and spread on the toast. cut 2 figs in half and top the toast with them. Drizzle with balsamic glaze and garnish with fresh thyme and black pepper
