The flavors are bold, and the sweetness of the grapes takes the salad to the next level. Serve it on toasted bread or enjoy as lettuce wraps for gluten free and/or low carb options.  Ingredients:
3 cups shredded rotisserie chicken
1 cup red grapes, halved
1 cup raisins
½ cup shaved almonds
½ cup celery stalks, chopped
1/3 cup red onion, diced
Dressing:
¾ cup mayo
1/3 cup full fat Greek Yogurt
Lemon juice from ½ large lemon
Salt and pepper to taste
1 tbsp honey
1 tbsp fresh cilantro, finely diced
 
Directions:
In a large bowl, combine chicken, grapes, raisins, almonds, celery, and onion and give it a good stir. In another bowl, combine mayo, yogurt, lemon juice, honey, salt, pepper, and cilantro and combine until silky smooth and pour all over the chicken salad mixture.
Give it a good stir until everything is well combined. Refrigerate for at least an hour for flavors to develop.

5 eggs, whisked
1/2 onion, diced 
1 large tomato, diced
2 tbsp pickled jalapeños, diced + 2 tbsp pickle juice 
Taco seasoning to taste
Handful of tortilla chips, crushed
1/4 cup shredded sharp cheddar 
Avocado as side 
Hot sauce for drizzle  Sauté onion until lightly brown, add tomatoes and taco seasoning, sauté for ~5 minutes. Add jalapeños, pickle juice and tortilla chips, cover with a lid and sauté for ~3 minutes.
Add eggs and gently fold until cooked through, top with cheese and let it melt a little.

It’s perfect for weekday dinner or lunch. You can use gluten free or low carb pasta if you are following this diet.  Ingredients for 2 portions:
2 chicken sausages (roasted garlic and Asiago flavor)
2 cups uncooked pasta (I used orecchiette)
2 cups mushrooms, cleaned and sliced
2 cups fresh baby spinach
2 cups grated parmesan cheese
¼ cup whipped cream cheese
¼ cup heavy cream
1/3 cup pasta water
3 tbsp olive oil
3 cloves garlic, minced
Salt and pepper to taste
 
Directions:
Cook pasta al dente according to the box instructions.
Preheat the skillet to medium heat, add oil and sausages and sauté until browned and set aside.
Using the same pan, add mushrooms and sauté for about 2 minutes. Add garlic, spinach and sauté until spinach is slightly wilted. It takes about 1-2 minutes.
Add whipped cream cheese and stir, add pasta water, heavy cream, and parmesan cheese, and stir until cheese is melted and sauce is smooth.
Add cooked pasta and sausages and give it a good toss. At this point, you can season with salt and pepper to your liking.
Give it a good stir and enjoy!  .

A handful of greens (I used a mix of baby spinach and arugula)
1/3 cup cooked harvest grains 
1/3 cup cucumber
5 cherry tomatoes
1 tbsp red onion, diced
2 tbsp crumbled feta
1/3 cup tzatziki 
A dollop of humus (to your liking)
Fresh dill to your liking
Salt and pepper to your liking
Greek vinaigrette and olive oil to your liking
Air fried 2 chicken tenders  Directions:
Season chicken tenders with greek seasoning or green goddess seasoning, spray some avocado oil and air fry on 400 degrees for 7 minutes.
While the chicken is in the air frying, assemble your bowl - greens, harvest greens, cucumbers, red onion, cherry tomatoes, salt, pepper, tzatziki, humus, feta. Add vinaigrette and olive oil.

This crustless chicken pot pie is like a warm comforting hug in a bowl and it’s so simple to make.  INGREDIENTS:
1 tray chicken tenders (1.3 lbs.)
2 carrots, sliced
½ cup frozen peas
½ cup frozen corn
1 garlic, minced
1 cup chicken stock
1 cup whole milk
2 tbsp butter + 1 tbsp butter
3 tbsp flour
¼ cup heavy cream
Salt and pepper to taste
 
DIRECTIONS:
Preheat the skillet to medium high, melt 1 tbsp butter or ghee and brown chicken until it is about ¾ cooked through and set aside.
 
Using the same skillet, add carrots, corn and peas and sauté for about 10 minutes. Add garlic and sauté for a few minutes. Add chicken stock, cover with a lid and cook for another 5 minutes over medium heat.
 
Next, we will make a roux (thickening agent for soups, stews, gravy). Begin by heating 2 tablespoons butter in a saucepan over medium heat until a pinch of flour sprinkled into butter will just begin to bubble. Then, whisk in 3 tablespoons of flour to form a thick paste the consistency of cake frosting. Pour in milk and whisk until the mixture is smooth and creamy with no lumps and transfer immediately to the veggies.
Add chicken, heavy cream and stir in until well combined. Season with salt and pepper to taste. And you are done ENJOY!  .

1 lbs ground turkey 
2 tbsp light oil
1 bag coleslaw cabbage mix
3 green onions, chopped 
1/2 cup peanuts 
1/4 cup Thai sweet chili sauce
1/2 cup coconut aminos 
1/4 cup cilantro 
1/2 tablespoons red chili flakes  Directions:
Preheat pan/skillet to medium heat and add oil.
Add ground turkey and brown, it takes ~ 3 minutes.
Add coleslaw mix and sauté for about 3 minutes.
Add coconut aminos, Thai sweet chili sauce, green onions, cilantro and peanuts. Give it a good stir (2 minutes) and you are done.

Pour in milk and whisk until the mixture is smooth and creamy with no lumps and transfer immediately to the veggies.
Add chicken, heavy cream and stir in until well combined. Season with salt and pepper to taste. And you are done ENJOY!  .

1 lbs ground turkey 
2 tbsp light oil
1 bag coleslaw cabbage mix
3 green onions, chopped 
1/2 cup peanuts 
1/4 cup Thai sweet chili sauce
1/2 cup coconut aminos 
1/4 cup cilantro 
1/2 tablespoons red chili flakes  Directions:
Preheat pan/skillet to medium heat and add oil.
Add ground turkey and brown, it takes ~ 3 minutes.
Add coleslaw mix and sauté for about 3 minutes.
Add coconut aminos, Thai sweet chili sauce, green onions, cilantro and peanuts. Give it a good stir (2 minutes) and you are done.
