WHAT MAKES THIS SOUTHWESTERN BREAKFAST QUESADILLA SIMPLE AND DELICIOUS?

INGREDIENTS:
- sprouted tortilla wrap
- shredded sharp cheddar cheese
- crumbled Cotija or Queso Fresco
- spring onion
- bell pepper
- eggs
- salt and pepper
- red chili flakes
- ghee or oil
STEP BY STEP INSTRUCTIONS:
- Preheat skillet to medium heat. Add some ghee, butter, or oil, and add diced bell peppers. Sauté for about 1-2 minutes.
- Add spring onion and sauté until all lightly browned – it takes a few minutes.
- Add whisked eggs and scramble until done to your preferred doneness.
- Using the same pan, add more ghee/butter or oil and place a tortilla wrap on the pan.
- Add half of your cheddar cheese to the outer part of the tortilla and top it with the veggie egg scramble. You will then top it with the rest of the cheddar cheese and Cotija.
- Flip the rest of the tortilla over (just like you would make an omelet) and toast on each side until lightly browned.

- 2 tbsp. crumbled Cotija or Queso Fresco cheese
- 2 spring onions, chopped
- 1/2 orange or red bell pepper, diced
- 3 eggs whisked
- Salt and pepper to taste
- Red chili flakes to taste
- Ghee or oil
